Hi Felicity,

It sounds like your hermie has molted. Put him in an iso tank, if you don't have one, section off a portion of your main tank with either glass or plastic. or cover him with the top half of a 2 or 3 liter soda bottle. He needs his exo close by as well as water and that is all. Just quiet and dark. Do not handle him after moving him to iso.
He doesn't need any food until he has finished his exo.
