I really don't think you can handle them too much. Just remember that they can get nervous of being dropped and it will bring them to pinching if so. Try to let them feel as secure as possible. This info you will find on the Handling page in the care sheets section.

I keep shells in one of my tanks, and the other I do not. I like to offer shells to my hermies after baths, while they are dring off in the dry off bin. This hels to keep the shells from getting old to them, and I find that they tend to switch more often this way.
